Surely you are already looking for Christmas recipes like crazy! This is the first of my proposals, super easy, light and delicious. With ingredients that everyone likes and also with a super Christmas and winter look, but at the same time something more modern. Also, if you make them in small cake molds like these, you already have individual rations ready to distribute easily during your Christmas meals.
Kick off to the Christmas recipes on the blog! Second week of Advent, the most endearing dates of the year are approaching and you have to start thinking about what we are going to prepare for so many family meals and dinners. It’s a little less than 4 weeks before Christmas arrives and I already have my special advent calendar for Christmas recipes for the blog that I will publish during the next weeks, starting with these small tarts.
At least in my family, the desserts have always been the big forgotten ones for those dates, it’s like eating so much during any of the meals that no one has room for dessert and usually only eat biscuits, “turron” and this type of small sweet things. Fortunately this is not so in all families, and over time more and more people are into make good desserts and Christmas sweets.
It seems to me personally the perfect time to bring out your baking skills and delight the guests with your creations. In addition, there are so many ideas that are now on the Internet that it is difficult to resist trying something. I’ve been almost since I started with the blog waiting for Christmas to come for making all these special recipes, and in fact I have so many different ideas that it is impossible to do them all this year, some I have to leave for the next one.
And I have to confess as a Christmas fan, I love it and it is by far the best time of year. I really love everything, family meals, Christmas decorations, the illusion of buying and opening gifts, aaaaall!!
Like the white and snowy look of the photos, I find it adorable. And the strawberries, because they give that red touch so Christmas. You can do it with another red fruit, the truth that today strawberries are found all year round, although now they are not in season and are a little expensive, but Christmas is a time of excess in any case, Why not with strawberries?
In a bowl mix the flour with butter and icing sugar, using your hands or a fork knead well until they are incorporated, it will look like crumbs. Add the two tablespoons of water and knead until homogeneous. Make a ball with the dough and place it between two sheets of baking paper. Roll it out until you have a flat dough of about ½ cm high. Chill the dough stretched between the two baking papers in the refrigerator for at least 30 minutes. Meanwhile you can go prepare the filling cream. Melt the white chocolate, into a water bath or in the microwave, whichever is easier for you. Let it cool for about 5 minutes, in the meantime heat the mascarpone 1 minute in the microwave until it is lighter in texture, like a creamy yogurt. In a bowl mix the melted chocolate with the hot mascarpone, let the mixture completely cool. In another bowl whip the cream and incorporate the mixture of mascarpone and chocolate in gently movements until you obtain a cream homogeneous. Reserve. Remove the dough from the refrigerator and use it to cover 6 tartlet molds. Pin the base with a fork and cover each cake with a piece of baking paper. Chill the molds in the refrigerator for 15 minutes. At this point you can also freeze them directly and bake them days later. Preheat the oven to 170º C. Cover the tartlets with chickpeas or baking weights if you have so that the dough does not rise. Bake for about 15 minutes or until the dough is golden. Remove from oven and let it to cool completely. Unmold the tartlets and fill with the cream. You can put some strawberry bits inside the cream if you want. Cool them in the refrigerator for at least 4 hours so that the cream is firm, better if you leave them overnight. Decorate with pieces of strawberry and just before serving sprinkle with icing sugar to make snow effect.

Notes
I recommend that you plan well with this recipe so that you do not accumulate all the work at the last moment. You can prepare the dough several days before and freeze it without any problem. And the cream and the assembly of the recipe can be donel the previous day, so in the moment of serving only you have to take them out of the refrigerator and sprinkle with the icing sugar.
Merry & Sweet Christmas,
