My mom used to make me custard for dinner. She ate me a good plate with a layer of Maria cookies on top, which were a bit soft when in contact with the custard. The touch that I liked the most was the generous amount of cinnamon powder that she put on the cookies. This cake reminds me of that, it’s like being a girl again and eating those custard dishes that my mother prepared for me again

This cake is perfect to prepare in summer. It does not need baking and using an envelope of custard preparation, you will have it ready with very little effort. Of course, you can choose to make some homemade custard, I have been too lazy and I have decided to opt for the easy and fast option. Maria cookies are a classic in Spain, perhaps they are the most famous cookies in the country. But if they are not known in your country, you can use any butter cookie as an alternative.

Let me tell you about little Miry now, I don’t think I have written anything about her around here. Miry is the new kitten in the family. On our last trip to Croatia, Miry chose us to be her adoptive parents. And I say that she chose us because she showed up one day in the garden of the house where we slept and she never left. Here the crazy lady of the cats, saw her so thin and hungry that she could not leave her there to her fate with a handful of food, and we decided to bring her with us to Germany.
The trip was quite an odyssey and the relationship with Triac is still quite strained. Of course I didn’t want a baby sister, but I hope they will end up making friends and the two of them will sleep together on my lap one day.

The point is that Miry is a surprise kitten, when we arrived in Germany I took her to the vet to do a checkup, give them vaccinations and plan the castration. But instead she did an ultrasound and I came out of there in shock when they told me that she was pregnant with 3 kittens. The news knocked me out, but I also found it most endearing. As sometimes in the world magical things happen. Why that stray kitten, in an almost unpopulated area of Croatia, had come to ask me for help. And it turns out that she was pregnant, when I was pregnant at that time too. It seems like an incredible coincidence to me.

She has not lost her kittens unlike me, and in fact we are looking forward to them at any time since in theory it has gone wrong. Unfortunately, I can’t keep the babies, having 5 cats sounds like a dream come true, but it would be logistically crazy. And besides, poor Triac would be overwhelmed by having so many new siblings. We will give them up for adoption to the one who can wean them and I am sure that everyone will find a home where they are cared for and loved. Miry will stay with us, of course to fill this house with more cat love, as fate has decided./p>

Sweet dreams,

Custard tart with Maria cookies
Cold no-bake tart with a base of biscuits and butter. The filling is made from a custard preparation base and finally covered with whipped cream and an aromatic touch of cinnamon powder.
Ingredients
- 200 g butter
- 350 g of Maria cookies
- 1 l of milk
- 28 g of unsweetened custard mix
- 10 sheets of neutral gelatin
- 120 g sugar
- 1 tsp vanilla extract
- 1 cinnamon stick
- Whipped cream, cinnamon and Maria cookies to decorate
Instructions
First we prepare the base of the cake, for this we prepare a spring pan of about 21 cm in diameter.
Blend the Maria cookies with a food processor until the same size crumbs remain. Pour the cookie flour into a bowl. Melt the butter and pour it over the cookie crumbs. Mix until the cookie crumbs are all wet.
Pour the cookie mix into the pan, and using the bottom of a glass, press until the cookie mix is evenly distributed on the walls and the base is flat. Refrigerate the cookie base for 1 hour.
Soak the gelatin sheets in cold water to hydrate them.
Meanwhile you can prepare the custard following the instructions on the package. I add a cinnamon stick to milk while it is cooking for an extra touch of flavor.
Drain the gelatin sheets well and add them to the custard while it is still hot. Mix so that everything is distributed well. Let the custard warm a little at room temperature.
Remove the pan with the cookie base from the fridge and pour in the custard mixture. Refrigerate for 4 hours or overnight until the filling hardens.
Just before serving, decorate with whipped cream, cinnamon and Maria cookies.
