It had been a long time since I made a healthy recipe and I think it was time again. The most interesting thing about this recipe, apart from the fact that it is ultra fast and easy, is the fact that apple puree is used instead of egg for the base. The crispy oatmeal is simply delicious, the key is the touch of cinnamon and golden syrup that give it a very special aroma and flavor and that contrasts perfectly with the acid and fruity taste of blueberries and lemon.
I owe you an explanation for the text of last week. Many of the ones that you have written to me have told me that it is Latin. Actually, it is, they are pieces taken from a book in Latin. I wanted to challenge how many people actually read the text before the recipe because I always tell Marc that nobody reads it. And some time ago I had in mind to put a piece of Lorem Ipsum to check who will notice it. Surprisingly much more people than I expected did. You have left me comment on the blog and also on social media, so I must shut up now that I see that you guys actually read me and from now on I have to focus more on the quality of the content for all those who spend a little bit of their time reading what I write here.
And changing topic radically, I want to talk about photography again. A few weeks ago I posted my first post with photos made with artificial light. I told you that they gave me a photo lamp for Christmas. Well these are the second photos I’ve done using that lamp and this time I really like the result. The first time I was not very satisfied with them, although later those photos are the ones that reached more than 4000 likes on Instagram and I’m still shocked.
I like those ones much more, I think they have been with a very nice uniform light. I have to keep practicing photography with that lamp. Tell me what you think of you, do you like these photographs more than I usually do? Do you see anything special? Would you say it’s artificial light?

Vegan Blueberry Oatmeal Crumble Squares
Ingredients
- FOR THE BASE:
- 130 g flour
- 120 g oat
- 100 g brown sugar
- 1 pinch of salt
- ½ tsp cinnamon
- 100 ml coconut oil
- 6 Tbsp apple sauce
- FOR THE BLUEBERRY FILLING:
- 200 g of fresh or frozen blueberries
- 2 Tbsp lemon juice
- Zest of 1 lemon
- 40 g brown sugar
- 2 tsp cornstarch
- FOR THE CRUMBLE:
- 60 ml coconut oil
- 2 Tbsp brown sugar
- 2 Tbsp golden syrup
- 200 g oat
Instructions
Preheat the oven to 170ºC. Cover with baking paper a square baking pan of about 25x25 cm.
In a bowl, mix all the ingredients for the base until you get a homogeneous mass without lumps of flour.
In another bowl, prepare the mixture of the filling by mixing all the ingredients together.
Do the same for the crumble, pour all the ingredients in a bowl and mix until they are distributed.
Pour the base dough into the pan and press it until it is distributed throughout the pan as flat and level as possible. Pour the blueberry mixture on top of the base and spread it evenly. To finish, cover with the crumble mixture evenly spreading on the surface.
Bake at 170ºC for about 40 minutes or until the crumble surface looks golden brown.
Remove from the oven and allow to cool completely before cutting into squares.
