Vanilla Ice Cream Cupcakes – and I introduce you to Triac

cupcakes_helados-8Don’t you find those cupcakes super cute? They are ideal as a present or to make with children. I made them in a very simple vanilla version and with a light cream cheese frosting, but of course you can use your favourite cupcakes recipe and give them ice cream shape.

cupcakes_helados-2Hello my dear readers! Have you seen that cosy recipe? To make cupcakes with ice cream shape is not new, surely you have already seen it on the internet and on various blogs. But I really wanted to make them someday, so here they are just in case someone can use the idea.

I show them, even if they are not perfect, for you to realize how complicated it is sometimes to make the photos with Mr. Naughty hanging around. Those who have cat for sure understand me, you cannot do anything new literally without them coming to sniff and see what is happening.

And well, since I took it in the photos I introduce it to you. This is my pretty, mischievous, sweet and super-spoiled cat. He’s name is Triac and I have him for almost 5 years. I adopted him still being a baby (he still was taking bottle) in an animal shelter near where I lived before in Barcelona and now he lives here in Munich, obviously.

And what else can I tell you about him? Well, I love him a lot, that he follows me everywhere inside and outside the house, yes yes …, he is a traveller cat has already visited several countries. He is super loving and that more than a cat sometimes behaves like a person, he talks to me and I talk to him. And well, because it shatters me photographic scenes (among many other things) that you have already seen … But basically, that adopting him is the best thing I’ve done and I rejoice every minute of life since I have him.

I really think I was so happy with these ice cream cupcakes because I have a trauma for the winter so hard we are having here and I cannot wait for the summer to arrive!!

Vanilla Ice Cream Cupcakes

Cooking Time: 20 min. Total: 40 min.


  • 115 g butter (room temperature)
  • 220 g of sugar
  • 3 eggs
  • 200 g flour
  • 1 and 1/2 tsp baking powder
  • 120 ml milk
  • 1 tsp vanilla extract
  • 115 g butter at room temperature
  • 150 g of icing sugar
  • 150 g cream cheese (Philadelphia type) at room temperature
  • 1 drop of red food colorant (optional)
  • DECOR:
  • 12 ice cream cones with flat base
  • Confetti or Colourful Sprinkles
  • 10 Maraschino cherries



Preheat oven to 180 ° C. Prepare a tray for cupcakes with capsules. For cupcakes. I have done so, and then I have taken them out of the cups and placed them into the ice cream cones. They can also be baked in the cones, but I have not tried it so I cannot give you my opinion.


Beat butter with sugar until creamy. Add the eggs one by one and beat until they are integrated.


In another bowl, sift the flour with the yeast. Add the flour to the moist ingredients mixture and continue beating just until incorporated.


Finally, add the milk and the vanilla extract and beat until you have a homogeneous dough.


Divide the dough into the capsules (or into the cones) and bake for about 20 minutes, always check with a stick are made. Remove from oven and allow to cool completely on a rack.


To prepare the frosting, beat the butter blender with the paddle accessory until it is creamy (about 2 minutes). Sieve the icing sugar, and add it to the butter. Knock for two more minutes. Add the cream cheese and beat until it is incorporated. Separate one-third of the buttercream and mix it with the dye to pink it.


Fill one pastry bag with half the white cream and the other half pink, to create the swirl effect in two colours. Decorate the cupcakes using the nozzle you like.
