Blueberry-Glazed Rooibos Vegan Doughnuts

vegan_doughnuts-22These doughnuts are super healthy but at the same time have a most appetizing aspect. Baked instead of fried, with vegan and organic ingredients and without refined sugar. Every occasionally, you must take care of yourself a little bit, right? The flavour of the dough is an exquisite combination of the aroma of tea and coconut that along with the blueberry glaze and cane sugar will make you addicted to them.

vegan_doughnuts-6I intend to make some healthy recipes, like this one from time to time. I do not know if I will get it, because I love buttercream and cakes, but I’ll try and see if I can get to a good balance. In addition, I will also try to make a vegan recipe from time to time, because it is difficult for them to find pastry that they can eat, since almost everything has product of animal origin.

vegan_doughnuts-3And today I also want to take the opportunity to tell you a little about the ingredients in the recipes. Particularly about organic ingredients. This recipe is all made with organic ingredients, that here in Germany can be found easily because people are very aware. In fact, there are several supermarkets that have only organic products and at the same price as normal ones.

vegan_doughnuts-2But what I’m going to tell you is my opinion and my experience with this type of products. In my recipes, I always use quality organic eggs, for example, believe me that the difference is there. I also always buy organic dairy products, the cream and yogurts, above all, are of a much higher quality than normal, at least here in Germany. Not butter, because I always buy a brand that has the texture and consistency that I like (I do not tell you not to advertise) and have no ecological version.

vegan_doughnuts-10And another thing that is super important, the skin of citrus. Many times, in the recipes I put in the list of ingredients an organic lemon or lime. This is important because if we are going to use the skin the organic product does not have the wax that they usually put to all the fruit of supermarket and that much that we wash it, in the end it ends up going to our organism. So, this part is important.

On the rest, well each one obviously does what he or she can. I understand that not everyone has affordable organic products or that is not in the ideal economic situation to afford these things. But, in summary, and if you want to get good results in your recipes, use quality ingredients, especially eggs and dairy.

And now that I’ve released a piece of cake that probably will not interest anyone, I’ll leave the recipe and you’ll tell me if it’s not a good treat !!

Blueberry-Glazed Rooibos Vegan Doughnuts

Ingredients

  • DOUGH:
  • 200 g almond milk
  • 2 teabags Rooibos (I used one that is flavored with chocolate and vanilla)
  • 50 g of melted coconut oil
  • 100 g brown sugar
  • 1 tsp vanilla extract
  • 220 g flour
  • 20 g cornstarch
  • 1 and ½ tsp baking powder
  • ½ tsp of salt
  • GLAZED:
  • 120 g brown sugar
  • 50 g blueberries (fresh or frozen)
  • 2 Tbsp water
  • DECOR:
  • Coconut chips
  • Chopped pistachios
  • Sprinkles

Preheat the oven to 180ºC and grease a doughnuts pan. Heat half the almond milk almost to a boil and pour into a cup. Introduce the two teabags and let it infuse for 5 minutes. After this time, add the rest of the almond milk, remove the tea bags and mix well.

In a large bowl mix all the liquid ingredients. Stir in sugar and lightly beat with the sticks. Let the mixture stand for 10 minutes so that the sugar dissolves.

In another bowl sift the flour with cornstarch, yeast and salt. Incorporate the liquid ingredients by mixing just until it is integrated and there are no lumps, do not overdo the dough or the donuts will come out hard.

Pour the dough into a pastry bag or frozen bag and cut the tip. Fill the doughnuts pan with the dough filling only about ¾ part of its capacity.

Bake for about 15 minutes or until golden brown. Remove from the oven and allow to warm for about 5 minutes. Then, demold and place on a grid to cool completely.

While they are cooling, you can prepare the icing. To make the blueberry paste, in a saucepan heat the blueberries with the two tablespoons of water. When cooking comes for about 5 minutes and then passes the mixture through a strainer. You will need 2 or 3 tablespoons of the brewed juice for the frosting.

Then, in a food processor, grind the brown sugar. The idea is to make a homemade powdered brown sugar. To do this, grind the sugar until it becomes a much finer powder.

In a bowl, mix the brown sugar powdered with 2 or 3 tablespoons of the blueberry juice, until it has the consistency of a frosting. If it is too dense, add a teaspoon of water or two, but always one by one and be careful not to overdo it.

When the donuts are completely cold, moisten them in the icing and place them back on the grid. Before the glaze hardens, decorate with the topping to taste. Let the glaze rest approximately 1 hour to harden.
