I wanted to make the intro of today’s post asking: “And who does not like rice pudding?” But it turns out, ironies of life, I do not like it!! Even so, I start with the same question, yes sir, because it gives me a chance to tell you that, even if you do not like rice pudding you’re going to like this cake. At least I have loved it, I promise that I have eaten two big pieces and really enjoyed it!
So an applause for me, right? Well, better two applauses, one for making a cake of something I do not like and another one, for making it so good that it turns out I like it! You already know me, right? I’m kind of risking it always using ingredients that do not like too much and to see how they taste in cakes. At the moment everything I’ve done was good, so, either I’m very good at baking (hehehe sure that is!) Or is that really many of the problems I had with food are gone.
Seriously, rice pudding is one of my nemesis. My mother used to do it very often as a main course for dinner, she and my brothers ate such big plates of it. But me, not even try it !! But I saw this recipe in a magazine and I was curious. I have modified it a bit to my taste, I must confess. And it was a huge success !! Also, everyone who has tried it gone crazy asking me to post the recipe, this does not always happen.
On the other hand, let’s see if I catch up a bit with the rhythm of posting because I still have troubles finding time to write. I also have several recipes accumulated, plus two more cakes that I’m preparing this week to bring to work as a farewell (yes, this is my last week at work!!) and I want to post them on the blog because they look really good 🙂
And by the way, I know you’re going to ask me about the flower stencil I used to make the cake decoration with cinnamon powder. Isn’t cute? Well I’m sorry to tell you that this time I can not help you, I bought it in a German store, it’s Rico Design brand “made by me patisserie” and it’s a kit that comes with 4 different stencills, in case someone wants to try their luck online. I have already looked and it is only sold in Germany …
If someone finds something similar, then tell me or pots the link in the comments! Maybe you don’t find them with the same flower pattern, but they sell them of other motives and sure that it will look pretty cool as well!
To prepare the base, melt the butter in the microwave. Grind the cookies until you have a thin flour. Mix the cookie flour with the melted butter. In a cake pan (I used a 21 cm one) pour the mixture and press with a spoon until it is well distributed and flat at the base. Refrigerate the pan for about 30 minutes. To make the rice pudding, heat the milk with the sugar, the cinnamon stick and the lemon skin. When it boils, remove the lemon skin and cinnamon and pour in the rice. Cook over low heat stirring occasionally for about 25 minutes. Turn off the heat and let stand in the pot for another 10 minutes. Put the gelatin sheets to hydrate with a little cold water. Pour the gelatin sheets drained into the rice pudding while it is still hot and mix to melt. Cool completely. Whip the cream, incorporate the rice pudding and mix in wrapping movements and smooth until the mixture is homogeneous. Pour the mixture into the pan. Refrigerate the cake for at least 4 hours. Meanwhile, you can prepare the berry compote. To do this, heat the jam in a saucepan until it boils. Pour in the berries and then cook for about 2 minutes, we do not want them to cook too much or they will lose shape and taste. Allow to cool completely before serving. Just before serving the cake, sprinkle with a little cinnamon powder, if you have a cake stencil you can use it to make a drawing similar to mine. Serve with the red fruit compote.Rice Pudding Cake
