Frozen yogurt mini bundt with blueberry and peach

I know you are not going to be able to resist these mini preciousnesses. In addition to being super easy to prepare, they are beautiful with that degraded effect and are a very light and healthy dessert. It has little sugar, lots of fruit and only a little fat from yogurt. The secret so that they are so beautiful is to use some beautiful silicone molds, below I leave the links that I have used in case you want to buy the pampering. It is a very good investment because they can be used both for cold and for baking and forms with precious!

Here we are, opening the autumn with an ice cream recipe 🙂 Sometimes I think you are not going to hate me so much, but I hope you still have a bit of patience and bare with me. I don’t want to excuse myself anymore, I’m always with that some story that I don’t have time for the blog and so on. And although it is completely true, I have also realized lately that I lack inspiration.

I do not know if the blog has saturated me and I do not want it so badly, or it is the pressure of knowing that I have so many overdue recipes that generates a kind of collapse. But sometimes I find myself in the situation of having to write the recipes and I find it very uphill … Maybe I should consider changing the format to make it easier for me to post new content, or take a somewhat longer break.

At the moment it seems that 1 recipe a month I can hold it, but I think it is too little. And then things like this happen, when I post summer recipes almost when we are entering autumn. Although I know that in Spain it is still hot and it is certain that an ice cream fancy you equally;)

If you can think of ideas on how I can make the simplest blog post with less efforts, or if you can think of what else I can do to bring my motivation back, leave it to me in comments or write me a message. I would love to hear your ideas because I am kind of hopeless right now.

And as I had promised you at the beginning of the post, here I put the links of the silicone molds that I have used to make these ice creams, in case you want to buy them online. The quality is very good and as I told you, they can be used both for freezing and for baking.

Frozen yogurt mini bundt with blueberry and peach

Serves: 10 mini bundts
Cooking Time: 50 min. + 5h freezing time

Ingredients

  • 250 g fresh blueberries
  • 120 g sugar
  • 3 peaches
  • 750 g unsweetened plain yogurt
  • 250 g whipping cream

Instructions

Wash the blueberries and freeze 1 handful to decorate with them at the end. Heat the rest of the blueberries in a saucepan with 60 g of the sugar and 2 tablespoons of water. Remove from heat when it boils, blend them until you get a very fine puree and let it cool.

Peel and chop the peaches, heat in another saucepan with another 60g of sugar and two tablespoons of water. Blend and let cool.

Whip the cream and add in the yogurt beating until it is integrated. Separate 1/3 of the yogurt cream and mix it with the peach puree.

Separate half of the blueberry puree and set aside in a bowl. The rest of the blueberry puree incorporate it into the yogurt cream and yogurt without mixing very little to create a marbled effect.

Pour a teaspoon of the blueberry puree directly into the base of the molds. Freeze for 5 minutes. Fill with the blueberry and cream marble mixture until half of the molds and the other half with the peach cream.

Freeze the molds for at least 5 hours. Decorate before serving with frozen blueberries.
