Cherry Semifreddo – sugar free

Today I am bringing you a recipe very fresh and very easy. Did you ever make a semifreddo? Not? Then, you must break the ice and see how easy it is. And why not starting with this delicious, spiced and healthy cherries and honey semifreddo?

Summer is here and we fancy more and more eating cold desserts. The time of switching off the oven has become and switch to creams, ice-creams, slushies… and of course, everything with a lot of fruits!! And, why not also the poor and forgotten semifreddos. This Italian dessert are extremely easy to make and they have a texture very close to ice-cream. Moreover, to make them you don’t need a machine, as you do for ice-cream, so everybody can do them! Oh, cherries, cherries…!! For me the unambiguous sign that summer has arrived!! I love them, confession number (I have lost count): cherries are my favourite fruit. I know, it is not original at all. But if they are good, what can I do? Or do you know someone whose favourite fruit is avocado or Indian fig? Cherries, strawberries, I don’t know… must be the red colour!

May I tell you a story? I’ve always loved cherries so much that, when I was a kid (I think I was like 5 or 6 years old) I was alone at home for some minutes because my parents when down to the vegetable garden. I opened the fridge and attacked a bag of cherries (of course not washing them) and I ate as much as I could until my mother came and stopped me. Well, in the same evening I ended up with such a digestive problem that I was hospitalized for one full day with intravenous.

Yes, it is absolutely true. I’ve always been a kid who ate quite a lot, but specially cherries make me lose my mind. And I didn’t loathe them, not at all. With the time I learned to how to have the self-control I didn’t have as a kid, and nowadays I can stop myself. But I have to admit, that sometimes I still have problems, I think when it is about eating cherries, I don’t have a limit.

When thinking about a cherry based dessert, I decided to make this semifreddo since I didn’t see many of this recipes in the blogs I normally follow. And also because I wanted to use my brand new and beautiful silicon Dahlia forms. Since semifreddos are almost like an ice-cream, they can be done with many different fruits, just feel free to play! In this one in particular, the spiced and exotic flavour of the cinnamon, the vanilla and the honey is simply exquisite!!

Cherry Semifreddo - sugar free

Serves: 10-12
Cooking Time: 40 min. Freezing 4 hours

Ingredients

  • 500 g cherries
  • 300 g whipping cream (very cold)
  • 8 egg yolks
  • 120 g honey
  • 2 Tbsp lemon zest
  • 1 pinch of cardamom powder
  • 1/2 tsp cinnamon powder
  • 1 pod Vanilla flesh
  • 300 g of Crème double (double cream 48% fat)
  • 4 cl cherry juice

Instructions

Wash the cherries, dry them and pit them.

Whip the cream and keep it aside for later.

In a large bowl, mix egg yolks with honey. Put in a pot at bain-marie and beat continuously with the whisk until the mixture gets foamy (like 2 minutes). Watch up, don’t heat the mixture to much or you will cook the eggs.

Remove from the fire and add the lemon zest, the spices and the doublé cream. Mix gently until incorporated.

Pour the mix into the whipped cream bowl and mix gently until combined. Add the chopped cherries and the cherry juice. Mix a bit more and it is done!

Prepare a form, if it is silicon will be better. Cover it with transparent plastic film. Pour in the mixture and freeze for about 4 hours.

Remove it from the freezer 10 minutes before serving so that it gets a bit soft.
