Fluffy cinnamon and cider cupcakes stuffed with spiced cranberry and apple jam, and with a delicious cream cheese buttercream. It is basically any flavor that reminds you of Christmas together to create some delicious cupcakes that are a great option for a different Christmas dessert.
I know that by now you must be a little stressed with the preparations for the Christmas dinner tomorrow. Well, likewise I am that this year I have to help my mother to do everything because you already know that she is not quite well. But among all that pre-Christmas stress I’ve taken a free moment to post the last Christmas recipe of the blog. And I’m sure that you can also take a little break to read it and maybe you want to prepare it in the coming days.
They are ingredients that fit perfectly to this time of the year, especially if temperatures drop a little. I have seen red cranberries in the supermarket near Barcelona these days, I had always had doubts about whether they can be found fresh or not, but I have already verified by myself that at least during the Christmas season they have them in the supermarkets. So you have no excuse!
From my side, I have already returned home for Christmas, so it’s time to disconnect a few days of recipes and blog. Although surely something I have to do because the family always want to try things and, to be honest, because I really have trouble getting away from the kitchen 🙂
But maybe I can drop you some more recipe before the year ends, I promise nothing but I will try! It depends on how lazy I feel. You have to forgive me but one also deserves a vacation from time to time and these days it is time to spend with the family and to be able to be away from the computer.

Sider Cranberry Apel Cupcakes
Ingredients
- CUPCAKES:
- 220 g brown sugar
- 200 g butter at room temperature
- 4 eggs
- 1 tsp vanilla extract
- 250 g flour
- 1 tsp of baking powder
- 1 tsp ground cinnamon
- 1 pinch of salt
- 225 ml cider
- FILLING:
- 225 of fresh red cranberries
- 100 g brown sugar
- 50 g white sugar
- 225 ml cider
- 1 apple cut into cubes
- 1 tsp cinnamon
- 1 anise star
- 3 grains of cardamom
- The zest of 1 tangerine
- CREAM CHEESE BUTTERCREAM:
- 225 g cream cheese (type Phyladelphia) at room temperature
- 120 g butter at room temperature
- 1 pinch of salt
- 1/2 tsp cinnamon
- 360 g icing sugar
Instructions
To prepare the cupcakes, preheat the oven to 170ºC. Prepare a tray for cupcakes with paper cups for muffins. In the bowl of the mixer, mix the butter with the sugar until it is creamy, for about 2 minutes. Add the eggs one by one mixng until they are integrated. Add the vanilla extract and beat for about 30 seconds more.
In another bowl sift all the dry ingredients. Add the dry ingredients alternating with the cider to the egg mixture, beating slightly between additions and starting and finishing with the flour mixture.
Divide the batter into the cupcake cups without filling them more than 75% of their capacity. Bake for about 20 minutes or until the stick test, it comes out dry. Remove from the oven and allow to cool completely on a rack.
To prepare the sauce of the filling, put the cranberries in a saucepan with the two types of sugar, cider and apple. When the cranberries begin to pop, add the remaining ingredients and let simmer for at least 45 minutes, until the sauce reduces and you have a kind of thick jam. Remove the star anise, the cardamom seeds and let it temper before using it.
To prepare the cream cheese, in the bowl of the mixer with the paddle attachment whisk the butter with the cream cheese for about 3 minutes. Add the salt, cinnamon and icing sugar and mix first at low speed so that the sugar does not fly out and then at high speed for about 3 more minutes, until the buttercream has the desired consistency.
To decorate the cupcakes, make a hole in the center of the cake. Fill each cupcake with a teaspoon of sauce. Fill a pastry bag with the nozzle that you like best with the buttercream and decorate the cupcakes. I used a cranberry to decorate, some candy trees and a little gold dust to sprinkle and give extra Christmas touch.
