I am crazy about the colors of today’s post pictures. I love berries, specially red ones. And what about the beautiful pink of the ice-cream? I think I said it already many times, but I love summer just because of the amount of fruits one can find (not for the warm, this I hate it!). So, for me berries are the queens of summer.
And today it is the time for raspberries! I have my own raspberry plant in the balcony. This is its first year, but still it was full of fruit those days (well, not anymore, I’ve eaten them all…). It is so cool just to take them and eat them directly from the plant, and they taste so good! So, I was so happy with my own grown raspberries that I thought; -we have to do something for the blog! And here they are! in a frozen yogurt, could be anything better for summer?!
Blend the raspberries with the honey and the lemon juice. Strain the mixture to remove the small raspberries seeds. Add the yogurt and mix. Whip the cream and incorporate to the yogurt mixture. Mix until all ingredients are combined. If you have an ice-maker, follow the instructions of your machine. If not, pour the mixture into a metallic pan and freeze for at least 4 hours. Remove from the freezer about 10 minutes before serving to make it softer. Serve with some white chocolate sprinkles as topping.Frozen Raspberry yogurt - sugarfree recipe
