Mmmmm it smells like summer!! In Munich, we have some scandal temperatures these days, it’s like being in the middle of summer. And after the wonderful weekend I spent on the beaches of Croatia, I have come up with the summer and I have prepared these very cool and fruity popsicles.
I have missed the sun, it has been a long winter and 1 month ago we still had snow around here. So, I’m thrilled (and have sun burned skin) after these short holidays break, relax and lots of sun.
I do not even have post-vacation depression, but the reason is not the sun. The reason is that I go on long holidays again on Friday!!! When one returns from a trip to work one week and go back to another, obviously, there is no post-vacation depression 🙂
Now I am going 2 weeks for a road trip in the fjords of Norway. And I’m super excited because it’s one of the trips I’ve always wanted to do. I will not see the sun so much, but I am more of green landscapes and mountains, so I hope to find there my little paradise.
And that’s why “Cau de Sucre” is going to be “closed for Holidays” for about 2 weeks. I would have liked to leave prepared recipes and write some input to be published automatically, but I am human and I have not been able to do it … So, I leave you a few days without recipes, I hope you forgive me. But I compensate you with this summery and delicious recipe for closure. And to those who follow me on Instagram, I’ll post pictures of my trip in the “stories”!!!

Berries and Yogurt Popsicles
- BERRIES PUREE:
- 100 g sugar
- 180 ml water
- 350 g berries (blackberries, blueberries, raspberries, strawberries ...)
- 1 Tbsp lime juice
- YOGURT MIXTURE:
- 180 g reduced fat yogurt (I used coconut flavour, you can use the one you like)
- 60 g cream cheese Philadelphia type (you can use the light version)
- 60 ml skimmed milk
- 50 g sugar
- 1 tsp vanilla extract
- 1 pinch of salt
Place the sugar and water in a saucepan and cook until the sugar has dissolved, about 5 minutes. Let the syrup cool back to room temperature.
Mix the syrup with the rest of the ingredients berries puree and process everything well with the food processor until it is very thin.
In another bowl, mix all ingredients of the yogurt mixture until combined.
Separate the fruit puree in 4 different bowls, leaving a little more quantity in one of them. Reserve the one with more quantity aside. To create the ombre effect we will add the yogurt mixture to the other 3 bowls in different amounts to obtain different colour tones.
Start by adding 2 tablespoons to one of the bowls, and increase the number of yogurt tablespoons in the other two until you have colours that you like. This is up to personal taste, I cannot give you the quantities.
Create the first layer of the popsicles using the pure berries puree, the one that does not have yogurt. Fill the popsicles mould as ¼ part of the capacity and freeze for 30 minutes.
Remove from the freezer and create another layer of the next tone and freeze for another 30 minutes until you create the next one. Keep on repeating in ladder colour from more intense to softer.
When you have prepared the last layer, freeze for about 45 minutes. After that time, remove the popsicles mould from the freezer and insert the stick. Freeze for at least 12 hours before consuming.
To unmould, put the popsicles under the tap water for about 30 seconds.
