Cowgirl Cookies

IMG_0047Delicious, lovely and quick. If you are a cookies fan, must try these ones!

I wanted my first blog recipe to be something spectacular but this is not exactly the case. The truth is that these cookies of harmless appearance are indeed one of the most delicious I have ever eaten.I have baked them several times and they always fly away!

They are yummy, easy to make, cheap, fast… but none of this qualities are giving them the privilege of being the very first entry of my blog.

You must be dying to know why, there it goes… it is because those cookies ingredients in a jar were my wedding guest favors a bit longer than 4 months ago.

Among my guests there were some more and less talented for baking, with different tastes, etc. But absolutely everybody who has tried the cookies was surprised (just as I was) of how tasty the are.

What else do I have to do to convince you for baking them? It is worth investing less than 30 minutes of preparation just to try, isn’t it?

Serves: 25 cookies
Cooking Time: 10 min. Total: 20 min.

Ingredients

  • 180 g (1 and 1/3 cups) general purpose floor
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 85 g (1 cup) oats
  • 100 g (1/2 cup) brown sugar
  • 100 g (1/2 cup) white sugar
  • 130 g (3/4 cup) chocolate chips
  • 60 g (1/3 cup) walnuts (or pecans)
  • 1 Large egg
  • 115 g (1/2 cup) butter
  • 1 tsp vanilla extract
  • 130 g (3/4 cup) m&m

Instructions

1

Preheat the oven at 180ºC. In a large bowl mix the floor with the baking powder, the baking soda and the salt. Add the oats, the sugar, the chocolate and the walnuts. Mix all ingredients together with a spoon or a spatula. Keep the m&m apart.

2

Beat slightly the egg and put the butter in the microwave for 30 seconds just to softer if a little bit, don’t heat it. Add the egg, the butter and the vanilla (go ahead! everything at a time) to the previous mix. Mix all ingredients together, it can be hard to mix with the spoon, if it is so it is time to put your hands on it!. Don’t be scared if you think the dough is too dry and short, that is how it should be. And please don’t add extra eggs or butter! if you do so they will melt in the oven and will not have a proper shape.

3

Make balls of about 3 to 4 cm, place them in a oven plate with a baking sheet. Yous should have like 25-28 balls. As a final touch, put some m&m on top of each ball.

4

Bake them for 10 minutes, let them chill and enjoy them! Do you want a tip? Deep them in cold milk, they taste even better!

5

If you are a bit lazy and don’t want to add the m&m manually to each ball, you can add them to the dough, the problem is that they will lose the color in the oven and the cookies will not look that nice, but the taste is the same.

Sweet dreams,
