I would almost dare betting that you have never eaten such addictive cookies. Do you see the jar full? I promise you that in a few minutes I could make them disappear because once you start eating you can not stop. The secret? the wonderful combination of the salty touch of macadamia nuts with the sweetness of white chocolate. Simply excellent!
I have crafted a recipe worth restoring your trust in me. Here you have tones of sugar and calories. Besides the danger that implies not being able to eat only one. And not only that, once you try this recipe you will automatically put it in your list of usual recipes. As you can imagine there are few recipes that I repeat, but this is going to be one of them. In fact, they were over not so long ago and my husband is already asking me to bake more.
In general, cookies do not fail. They are a perfect bet, they are also super easy to make, I do not know anyone who has tried to bake cookies and failed. Moreover, everybody likes them !! I especially advise white chocolate lovers, be careful with them because for you it will be your downfall !!
And by the way, I take this opportunity to tell you some great news in this post !! I’ve been a little missing, in general because the new job has me a bit stressed and I have little strength left for the blog. But also because my husband and I have been looking for a house to move to. And finally, yesterday we signed the contract of the house of our dreams! It is so pretty, with its small garden and a lot of space, just what we were looking for !! I love it!!
So, in case I did not have enough things to do now, a moving comes over me. Well, and not only that, but also the planning of the kitchen that must be done because it does have any. Let’s see, it is a job that I will do with great pleasure because being able to design my own kitchen is something that I have always dreamed of, but it can not be denied that it is a lot of work!
But do not worry, with moving or without moving here we will continue posting recipes. The first thing I’m going to put in the new kitchen is a good oven, even if it has to be on the floor 🙂 And be aware that next week we start with Christmas recipes!!
Macadamia White Chocolate Cookies
- 125 g butter at room temperature
- 125 g coconut butter
- 250 g sugar
- 1 tsp vanilla extract
- 2 eggs
- 400 g bread flour
- 1 pinch of salt
- 1 tsp baking soda
- 150 g white chocolate chips (or white chocolate cut into pieces)
- 125 g macadamia nuts cut into pieces
Mix the two butters with the sugar until you get a creamy, whitish mixture. Add the vanilla extract and the eggs mix until obtaining a homogeneous mixture.
In a bowl combine all the dry ingredients and add them to the previous mixture mixing until all are combined. Let the dough rest in the refrigerator covered with a plastic film for at least 1 hour.
Preheat the oven to 200ºC. Cover two baking sheets with baking paper. Make balls of the same size with the dough and place them in the oven trays leaving enough space between them as they will expand when baked.
Bake for 9 minutes. Cookies must be soft and slightly browned when removed from the oven. Let cool for about 10 minutes before devouring them.
