In the end this is like a drug, it is not the first time I do it, going out for the weekend or traveling and using those moments of rest in the hotel to write for the blog … crazy as you think, But I do it with pleasure!
Today’s recipe I also prepared it a little quick last weekend. A whole experiment for me, I had heard a lot about the superfood trend and some of its famous ingredients, but I had never tasted anything. And then I thought that it was time to try something and that it would be quick and easy to do because I did not have much time.
Then I thought about combining the fruit of the month (the pomegranate) that Lidia had chosen in “Nunca es demasiado dulce” for the “dis-fruta” challenge with a chia pudding, since both are on the lists of super foods for their excellent Nutritional values. And this is the result. To any of you who have never heard about chia seeds before (like me a few months ago), is a seed of a size a little smaller than sesame that comes from a plant that is cultivated in South America. Again, I recommend a visit to google, you can also search by its scientific name: salvia hispanica.
You will be waiting to hear my verdict, how does this taste like? Well, I will not deceive you because I never do and I can not risk losing my credibility. I found it strange … the texture very curious and nice, yes. Something completely new that is pleasant to discover, now the taste as it is, rather boring and a bit bland even. Now, let me put you in the background, the ingredients in the recipe, the almond milk and the pomegranate make don’t fancy me at all, so this time my opinion is not impartial. Although I always make a try at abstraction, I eat everything and try to be objective.
The best will be that you try it yourselves, in any case it is worth only because it is the healthiest indeed. We can not always eat cakes and cupcakes my dears!!
To prepare the pudding, mix in a bowl the chia seeds with almond milk and sugar. Chill in the fridge for at least 4 hours, you can prepare it the previous day without problem. Scrape the pomegranate and reserve the seeds. Put the Grenadine in a saucepan. In a glass, dissolve the cornstarch with 2 tablespoons of cold water. When the grenadine begins to boil, pour the water with the cornstarch and cook until it thickens. Remove from heat and add 3/4 parts of pomegranate seeds, reserve the rest to decorate. To assemble the cups, put a little pudding in the base, cover with the mixture of grenadine, then put a little more pudding until filling the glass and pour a little more of the cream of grenadine.
