So you think limes are used for drinks? Well, here I am to change this myth. Lime is so aromatic and delicious that is perfect for making desserts and sweets. It can be even better than lemon since it is sweeter. If you are looking for a light dessert, easy but original for those plentiful Sunday’s lunch, just continue reading because you found it!
And you will see today how easy is the thing, so that anybody could argue that you can’t do it because you don’t have a particular pan or tool or you are not skilled decorating cakes. This dessert is suitable for all cooking levels!! You only need a couple of sauce pans, some glasses or small pans (whatever you find) and zero decoration efforts.
Coming back to the recipe, I wanted to tell you something about the lime curd. It has been a discovery for me, I never tried it before and I was just amazed of how yummy it is!! Lemon curd is very famous and well know and I also love it but I just found out that, in my opinion, lime curd is just even better!
I had never tried a lime curd, but now has been placed on my list of creams and favorite fillings, so at the first opportunity you get another recipe with this cream ;). All there is in that jar of photos I have left of the recipe, vosotr@s also you will be leftovers, I’m turning you see what do I do with it, but I know that I will end up eating it by tablespoonfuls…
And now that I discovered it, you will see soon tons of recipes coming with lime curd😉 With the quantities provided for this recipe you will have some spare lime curd, as I also got. I am sure you will find the way of using it in any other kind of dessert, it combines perfectly with any kind of pies for example. I am just thinking that mine will not last long and I will end up taking a spoon and… mmmm the end is clear!
And what do you think about this beautiful soft green color? I simply love it and I think the combination of the white ivory of the mousse and this green is gorgeous. Such a summer like dessert!
Finally, I just wanted to remark that this recipe could be easily modified to gluten free. You just need to remove the cookies base or use gluten free cookies instead of the regular ones, and it will be anyway delicious. Both the mousse and the lime curd are gluten free.
