Strawberry tart with Elderflower and White Chocolate cream

Such a fresh and spring-like tart. A perfect symphony between the juicy strawberries and the elderflower syrup and white chocolate cream. And just to add a crunchy touch, some pistachios as topping. Could you resist trying it?

Today I promise I am not exaggerating, this pie is so good and refreshing that I am sure you would like to have a piece right now. For the ones that already know elderflower syrup, you might be wondering how to use that on a pie. Well, so far I can only tell you that you must try it, just trust me, because it is so delicious that you will not regret. So if you wanna learn how to do it, just continue reading!

I am just crazy about this kind of fruit tarts. I don’t know if for you is the same, but some days i just want cakes with buttercream and chocolate (yes, lots of chocolate). But then, you have this kind of tarts that fancy at any time. And the truth is, that they are so light and fresh, that who doesn’t like to have a piece in any occasion?

And well, you are waiting for the explanation of the key and special ingredient of this tart, the elderflower. And yes, you can use it for baking and it is really delicious. Probably you are used to see it only in drinks, most of people use it in cocktails or as tee. But trust me when i tell you that it is also excellent the touch that gives to some sweets. I personally love this flower taste.

So in this tart I have use elderflower syrup in the cream filling, just some table spoons and it gives it and outstanding taste. It could be difficult to find the syrup sometimes, that is why I am preparing a special post with instructions to do it homemade. The threes grow all around in the forest and the are full of blossom right now, so you can do perfectly and you will see how easy it is!

Strawberry tart with Elderflower and White Chocolate cream

Cooking Time: 30 min. Total 1h + 1h30min. chilling.

Ingredients

  • For the crust:
  • 200 g flour
  • 70 g icing sugar
  • 1 pinch of salt
  • 1 egg
  • 100 g butter (cold)
  • For the cream:
  • 200 g heavy whipping cream
  • 2 Tsp elderflower syrup
  • 200 g white chocolate
  • 3 egg yolks
  • For the topping:
  • 250 g strawberries
  • 1 handful chopped pistachios
  • 1 bag of tart glaze (optional)
  • some fresh eldeflower (optional)

Instructions

In a bowl, cut butter in small pieces and add in flour, sugar, salt and egg. Mix well until combined. Make a ball with the dough and cover it with transparent film. Refrigerate for 30 minutes.

Fat a tart round pan. Roll the dough and cover the tart pan with it. Cut the edges and poke the base with a fork. Refrigerate again for, at least, 1 hour.

In the meantime, start preparing the cream. Heat the cream in a sauce pan and add the elderflower syrup. At low fire and mixing well, add in the chocolate until and mix until it melts. Remove from fire and let it cool.

Add the egg yolks to the cream once it is cold, one at a time. Remove the pan from the fridge and fill it with the cream.

Preheat the oven at 180ºC. Bake for about 30 minutes or until you see it becoming gold brown Remove from the oven and let it to cool completely.

Clean the strawberries and cut them in the shape you prefer. Cover all the tart with them.

Prepare the tart glaze following the instructions in the bag. Pour it over the tart, spread some pistachios and the fresh elderflowers to finish it.

Notes

if you cannot find the edelflower syrup you can do it yourself at home. Soon I will publish a post explaining how.

NOTE 2: still, if you don’t want to use the syrup you can make the tart anyway. Just use 2 Tbsp sugar instead or use another kind of syrup that you like.
