Dutch Baby, a breakfast for hungry people

Fast, delicious breakfast and you can also make it healthy. The smell of this kind of Pancake when it is in the oven will make the whole family get out of bed immediately, like a horde of zombies chasing brains.

I put you in a real situation. Saturday, 7 in the morning. The cat does not let me sleep, I have a hangover because yesterday I drank too much wine. My body wants to sleep but my head has decided that it does not sleep anymore. I get up, I drink water (which I really need) and I decide that I am going to write a new post for the blog. I have many pending ones, which one do I choose? Dutch Baby, I have not posted a Sunday breakfast for a long time!

I create the new Post in WordPress. I open the photo folder. I feel faint. After looking at about 3 or 4 photos my stomach sounds like a lion and it roars at audible levels. I recover the recipe. Assault the kitchen, prepare the ingredients and in 5 minutes I have the batter done. It takes 20 minutes to wait, God, those waiting minutes are deadly. It’s the only thing I do not like about this recipe …

I wait. I’m still waiting. I open the photos again. God, I am starving !!! I preheat the oven. Back to the couch I almost fainted from hunger. Why do I keep looking at the pictures? This is torture!!

I prepare the very cute iron pan. It is heating in the oven. 10 more minutes of waiting. Please can somebody kill me!? In the meantime, the cat has already had breakfast and now sleeps satisfied on the couch. His work is over, he has already managed to get me out of bed.

I am distracted for a while looking out the window with a lost look. Just to stop looking at these photos and this delight for a while. The pan is hot !! I jump into the kitchen, put the butter in the pan and pour the batter. I use all my self-control to not eat it raw.

Again waiting. 15 more minutes, and this time much worse than before. The smell that comes out of the oven is heavenly. I’m sure Heaven smells like Dutch Baby in the baking. My stomach is out of control, I can not take it anymore and it keeps roaring like a beast. Marc is still in bed. If the smell does not wake him up, when he gets down I’ll have eaten all myself. With no regrets. Zero.

The oven whistles! That beep in music for my ears (and for my stomach) My breakfast is ready !!!! And I’m running after him, that this has to be eaten warm 😉

Ingredients

  • 70 g all-purpose flour
  • 120 ml whole or 2% milk
  • 2 large eggs
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon fine salt
  • 2 tablespoons unsalted butter
  • Powdered sugar, maple syrup, and jam, for serving

Instructions

Place the flour, milk, eggs, sugar, vanilla and salt in a blender or food processor with the blade attachment. Mix for 10 seconds, scrape the sides, and then mix for another 10 seconds. The dough will be quite loose and liquid.

Leave the mixture in the blender and let stand 20 to 25 minutes. This gives the flour time to absorb the liquid.

Meanwhile, preheat the oven to 220ºC and place the pan that must be iron to heat in the oven for about 10 minutes.

Remove the pan from the oven with great care not to burn and place it on top of a heat-resistant surface. Add the butter and move the pan to melt the butter and cover the bottom and sides.

Pour the batter over the melted butter. Place the pan in the oven and bake until the Dutch Baby is lightly browned on top and darker brown on the sides and edges, for about 15 minutes.

Serve when it is still hot. Sprinkle with icing sugar and serve with red fruits, maple syrup or jam.
