I don’t want it, we don’t need a day to remind us that we are workers, we don’t want crumbs, we don’t want deferences. The day of the working woman is every day of the year. The best double chocolate muffins
Bakery style chocolate muffins with chocolate chips
- 280g flour
- 75g unsweetened cocoa powder
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 250g sugar
- 2 eggs
- 300 ml buttermilk
- 55g unsalted butter melted and cooled
- 60 ml vegetable oil
- 2 teaspoons instant coffee , optional
- 1 teaspoon vanilla extract
- 170 g chocolate chips or chunks
Preheat the oven to 220ºC. Place 12 capsules of muffins paper cups in a muffin pan.
Melt the butter in a medium bowl in the microwave and let it cool slightly while you prepare the other ingredients.
In a large bowl, sift the flour, cocoa, baking powder, baking soda and salt. Add sugar and mix. Set aside.
In a medium bowl, beat the eggs with the buttermilk, oil, melted butter, instant coffee and vanilla extract. Pour the wet ingredients into the dry ingredients and mix with a wooden spoon or a rubber spatula until they are combined. Do not mix too much. The dough should be thick and lumpy. Add the chocolate chips or pieces and mix until they are distributed.
Divide the mixture between the molds and fill them almost to the top. Bake for 3 minutes at 220 ° C and then reduce the oven temperature to 180 ° C. Continue baking for an additional 12-17 minutes (15-20 minutes in total), until a toothpick inserted in the center of the cupcake comes out clean. Transfer to a rack and let cool for about 10 minutes before removing from the pan.
