I’ve been out of the game too long. In all areas, also in the blog of course. Those who know me know the reasons and it is not necessary to repeat them. This week I have proposed to recover my beloved hobby. It’s costing me, but it’s a goal that I’ve set myself to achieve and here I am hitting the keyboard.
And once the desire to go back to doing what I loved so much is recovered, I find myself reflecting on how something as apparently simple as this can be an extraordinary therapy. Baking a cake is a process full of feelings of satisfaction. I have wanted to capture in this reflection all those that evoke me.

If we also add to the creative process the magical part of capturing images, I realize that what I have always thought was a rather silly hobby, couldn’t be further from that! Recovering all these feelings are definitely helping me recover and get back to being ME.

That’s why we resume with a super simple recipe!! 8 ingredients and 40 minutes you need to have this delicious cake. If you can’t find rhubarb, you can use strawberries, raspberries, apricots, or any other fruit that is in season.

Rhubarb Almond cake
A rhubarb almond cake is a delightful confection that combines the tartness of rhubarb with the nutty richness of almonds. The cake features a moist and tender crumb, subtly infused with the delicate flavor of ground almonds. The rhubarb, sliced into elegant strips, adds a vibrant burst of tanginess, balancing the sweetness of the cake. With its golden brown exterior and irresistible aroma, this cake is a perfect blend of sweet and tart, creating a harmonious symphony of flavors that will leave you craving for more.
Ingredients
- 250g rhubarb
- 100 g of sugar
- 1 orange
- 100 g butter (at room temperature)
- 3 eggs
- 70 g ground almonds
- 160 g flour
- 4-5 tablespoons of laminated almonds
Instructions
Preheat the oven to 180ºC with heat above and below (convection at 160ºC).
Line a removable baking pan of 20 cm in diameter with baking paper.
Grate the orange zest and reserve for later.
Wash and cut the rhubarb into large pieces and simmer in a small saucepan with 50 g of sugar and the orange juice for about five minutes. Let aside until cool.
Mix the butter with 50 g sugar until fluffy, beat for about 2 minutes. Add the eggs one by one without stopping mixing until they are integrated. Add the orange zest.
Add the ground almonds and flour into the batter and mix just until smooth.
Finally add the rhubarb and mix until evenly distributed.
Pour the dough into the pan and top with the laminated almonds.
Bake the cake in the oven for about 40 minutes until golden (test with a toothpick before removing from the oven!).
Remove from the oven and let cool before unmolding. Dust with icing sugar before serving.
