Guinness chocolate cake with Baileys cream

With a decadent blend of Guinness beer and chocolate, this cake is an adult delight. Rich and dark, the velvety bitterness of Guinness brings out the flavor of the chocolate, so it packs a punch, while giving the cake a subtle flavor. The delicious sponge cake is beautifully complemented by the Baileys cream, which makes the cake look like the famous Irish stout: black and top with a nice layer of foam.

I had wanted to bake this cake for St. Patrick’s Day for eons, but had yet to find the occasion. Dark chocolate lovers like me must find it super tempting to think how insanely delicious this combination must be. Dark chocolate with an extra bitter touch of beer, sounds good right? Although I am not a big fan of dark beers in general because of that touch of liquorice that almost all tend to have, in fact I have only had a Guinness once and that was when I visited the factory in Dublin. But I have always thought that combined with chocolate they must be great. And he was right!

I am almost a bit late for the celebration, because I am posting this on the same Saint Patrick’s Day, but I have accumulated delays in the publications due to a technical incident that I had with the blog last week. But it is fine, because I know that here my readers who love sweets will be encouraged to make the recipe without having a reason for it or a celebration behind it!

The photos are inspired by the light and atmosphere of an Irish pub. I do not feel very comfortable taking such dark photos, I think it is not my style and that the main object is not appreciated well. But I hope that the vibes that I was looking for are transmitted well, because there is exactly where I would like to transport you when you close your eyes and taste this cake 🙂

Ingredients

  • For the cake:
  • 250 ml Guinness
  • 250g butter
  • 80 g cocoa
  • 100 g dark chocolate
  • 250 g brown sugar
  • 1 tsp vanilla extract
  • 150 ml sour cream
  • 2 eggs
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 275 g plain flour
  • 1 pinch of salt
  • For the cream:
  • 200 ml heavy cream (very cold)
  • 250 g mascarpone
  • 30 g icing sugar (or more if you want it sweeter)
  • 2 Tbsp Baileys

Instructions

Preheat the oven to 170 ° C. Grease a pan of about 20 cm in diameter.

Put the butter with the cocoa, sugar, chocolate and Guinness in a saucepan and let everything melt over medium heat. Remove from the heat and let it cool down a little.

Meanwhile, beat the eggs until they are foamy, add the sour cream.

In a bowl mix the flour, baking soda, baking powder and salt.

Add the melted butter and chocolate mixture to the egg mixture.

Finally, add the dry ingredients and mix just until there are no lumps.

Pour the batter into the pan and bake for 60-70 minutes. Let cool completely before unmolding.

To prepare the cream, mix the mascarpone with the sugar until creamy. Now add the cream and whip it until you get a solid cream. Add the 2 tablespoons of Baileys (this step is optional) and mix a few more seconds until distributed.

Frost the cake (which must be completely cold) with the cream and enjoy!
