Chocolate Mascarpone cake with Berries

This is one of the cakes I love, with tones of chocolate! And the berries combine perfectly with the chocolate. Forget your diet!!!

It’s already a wile that I’ve wanted to make this cake since I saw the recipe. And it is because is has a combination of this 3 I love; chocolate, berries and mascarpone, it is made for me. And the truth is that, if you love this ingredients just like me, this cake will bring you to a pleasure level that you still don’t know.

So, when better that for my own Birthday to make it! That was my self-present, and what a present! First time I saw the recipe in Linda Lomelino’s blog (call me cupcake) I already figured out how good this cake should be, but I never imagined that it could be really so delicious. With these creations, one can understand why is Linda one of the best baking bloggers (for me the best one). In this post I’ve slightly modified the original recipe.

The appearance of the cake is also quite amazing. Anybody with a sweet tooth will jump on it. And the berries are just giving it this flashy touch of intense red that makes it irresistible. I’ve added a chocolate ganaché icing because for me there is never enough chocolate. Just kidding, the ganaché brings some extra intensity to the chocolate of the cake that results delightful.

The chocolate mascarpone cream is simply something so delicious that should be forbidden. This cream by itself is already a dessert similar to a mouse that you could prepare to eat with spoon just by adding some berries on top and some whipped cream. There you have the idea. God, just by imagining it I’m melting, I have to try it one day!

About the preparation, I am not going to lie, it requires a bit of time and lot of ingredients. But it is not difficult at all, and the decoration is really simple and easy. Let’s say that is a cake to make only in special occasions. For sure, all efforts and money will be well rewarded since so attractive and yummy. I brought to the office for my birthday and all my colleagues were astonished when they saw it. Of course, all cake trace has disappeared in a few minutes.

Chocolate mascarpone cake with berries

Ingredients

  • For the cake:
  • 250 g flour
  • 70 g Dutch cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 200 g butter (room temperature)
  • 300 g brown sugar
  • 2 eggs + 2 yolks
  • 100 g dark melted chocolate
  • 1 tsp vanilla extract
  • 250 ml milk
  • For the cream:
  • 500 g Mascarpone
  • 85 g Dutch cocoa powder
  • 85 g icing sugar
  • 250 ml heavy cream
  • For the chocolate ganaché:
  • 125 g dark chocolate
  • 75 ml heavy cream
  • 1 Tbsp (15 g) butter
  • Decoration:
  • 100 g redcurrants
  • 200 g raspberries
  • 200 g blackberries
  • 1 tsp icing sugar

Instructions

Preheat the oven at 170ºC and fat a spring form of 10″. Sprinkle with some flour and cocoa powder..

In a bowl, sift flour, cocoa and add baking powder, baking soda and salt. Left aside.

In a large mixer bowl, beat the butter with the sugar until soft and fluffy. Add eggs and yolks, the melted chocolate and vanilla extract. Mix well until incorporated.

Stir in flour mixture and milk in 3 or 4 additions, alternating flour and milk and starting and finishing with flour mixture.

Bake for about 50 minutes or until a wood toothpick come out clean. Let it to cool in a wire rack.

For the filling, beat mascarpone with cocoa powder and icing sugar until fluffy. Add heavy cream (must be very cold) and whip add high speed until getting the desired texture (at least whip for 2 minutes).

Cut the cake in two halves and fill it with mascarpone cream, spread some berries over the cream and cover with the top of the cake.

Prepare the chocolate ganaché by heating in a small pan the heavy cream and the chocolate, mixing continously until chocolate is melted. Add the butter and mix until incorporated. Remove from fire and pour over the cake.

Finally, once the ganaché is lukewarm, place the rest of the berries on top and dust with some icing sugar just before serving.
