Blood orange yogurt and almond upside down cake

And you will have to admit that with such a simple trick as putting a few slices of orange so they are upside down is not a lovely cake for any breakfast or snack? Do it know that we have blood oranges in full season, in 15 minutes you will have it ready and will not regret it!

Common ingredients, seasonal, and also very easy to make. For sure you already know the famous upside down cakes, our mothers already baked them at the time, and my mother did it in a pot because at home we did not have an oven!

Well you can imagine now how simple is this recipe, the usual classic to which I have given a different touch by adding the almonds flour and using blood oranges which is a fruit that I find really pretty.

It is the first recipe for the blog that I have bake in my new oven. A super fancy convection oven that bakes cakes superbly! And it’s also the first photo session I shoot in my new photo studio. It is still under construction, in fact these photos I made with 4 woods on top of a carton box from my moving XD. This is called improvisation!

I’m still thinking about how to do it so I can have a structure where I can easily change the backgrounds I use for photo shoots, or if I can get a fixed table or keep changing the woods like I do now. Someone who wants to share with me some ideas or experiences on the same subject? Help me please, I’m lost!!

Blood orange yogurt and almond upside down cake

Ingredients

  • 3 eggs

  • 200 g sugar

  • 100 ml vegetable oil
  • 
4 Tbsp of blood orange juice

  • Zest of 1 blood orange

  • 250 g flour

  • 1 and 1/2 tsp baking powder
  • 
1 pinch of salt

  • 100 g almond flour

  • 200 g plain yogurt (no Diet or fat free)

  • Butter and some brown sugar to spread in the pan

  • A few slices of blood orange (2 oranges approximately)

Instructions

Grease a round pan of about 24 cm in diameter with the butter and sprinkle with brown sugar until the entire base is covered. Place the orange slices on top of the sugar, all over the base of the pan, you can put as many as you want. Preheat the oven to 170 ° C.

In a bowl, mix all the liquid ingredients and the orange zest until they are integrated, you can do it by hand perfectly.
Sift the flour with the baking powder and the salt. Add it to the liquid ingredients. Mix just until the flour is combined.

Add in the almond flour and the yogurt, mixing a little more until the batter is uniform.

Pour the batter into the pan and bake at 170 ° C for about 40 minutes or until the cake is golden brown and when punctured with a wooden stick, it comes out dry. Allow to cool down on a rack for about 15 minutes before unmolding.

    Have you thought about using a green screen in your photo studio, if you want to easily change the background? Also, you need a rotating table, and you have to get rid of those cardboard boxes, because they are so versatile that you might find them everywhere in your house if you don’t fight them constantly.

      Using a green screen is a great idea, I think I need to get one 🙂
      Well, I don’t see exactly why does the table has to be rotating, you will have to explain me better… But the cardboard boxes are doing pretty well the job XD But I have to say that now I only have 3 of them, you will be proud of me!!
