I am going to describe each of the layers of this wonder and so surely you can not resist to continue reading. In these jars you have: a layer of chia pudding made with almond milk, banana and chocolate muesli, berries smoothie with soy yogurt and coconut. All decorated with coconut strips and fresh berries. Do not you think it’s a mega super breakfast combo?
Again I have to go for fast and easy recipes because I do not have time for anything those days!!! Between endless workdays, get up at five and get home at eight in the evening, and travel weekends here and there, you’ll tell me where I’m going to find time for the blog 🙁 So I’ve had it a bit abandoned this week.
And I have also improvised recipe because this is not the one I had planned to do for this week, but I have not had time for more. The good thing is that I also show you an express recipe for those who are like me, with no time to cook. And I can assure you that it is super fast to prepare, the only thing to keep in mind is that chia pudding needs to rest all night.
I present it as a breakfast proposal, which in addition to demonstrating with my own experience that can be done with very little time, I also assure you by own experience that is a perfect breakfast for those days when the morning is long and stressful. With this breakfast you will endure perfectly and with energy until lunchtime.
And it is that, among the many properties of chia, is its satiating effect and high protein content, which will make it possible to endure much longer without the hunger that usually comes at midmorning (at least it happens to me …) I wanted also to make vegan because it is healthier, but of course you can use non-vegan alternatives to milk and yogurt.
It is the second recipe in which I use chia pudding, my first experiment was with this Pomegranate Chia Pudding. And since I do not like lying, the first time I tried it I did not like it too much. But this Parfait on the other hand has enchanted me, and I think the key has been the fruit. I love berries, but the pomegranate… the truth is that I do not like it too much. Chia pudding is fairly neutral in flavor, so here the key is to combine it with fruits that you like.
The berries smoothie, which has a texture similar to an ice cream or sorbet blends perfectly with the chia pudding and crunchy muesli, all resulting in a perfect breakfast for these temperatures that already remind us of the summer!
By the way, I’m a little worried because besides I do not know if I broke the rule of my May special with purple recipes (Noooooo !!!!!). You think it’s purple, or violet? To me somehow looks more like pink or magenta … Such a mental chaos that I have with the colors 🙂
Berry Chia Pudding Parfait
- CHIA PUDDING:
- 60 g chia seeds
- 400 ml of almond milk (or whatever milk you want)
- 2 Tbsp maple syrup
- 1 tsp vanilla extract
- 200 g of frozen berries mix
- 1 ripe banana
- 4 Tbsp of coconut-flavored soy yogurt (or any other yogurt you like)
- 1 Tbsp maple syrup
- TO DECORATE:
- 1 handful of muesli of your favorite flavor (I've used banana and chocolate)
- Whole berries
- Coconut strips
- Mint leaves
Chia pudding needs several hours to form. I recommend that you prepare it the night before and leave it overnight in the fridge so that it is ready in the morning.
Mix all the ingredients of the pudding in a bowl slightly to make sure that the chia does not form lumps. Store the covered bowl in the refrigerator for a minimum of 4 hours or better, overnight.
The next morning, process all the ingredients of the smoothie in a food processor until you get a consistency similar to a very soft ice cream.
To assemble the parfait, place a little chia pudding in the base, cover with 2 or 3 tablespoons of muesli and finally with the berry smoothie. You can continue to make layers depending on how big the jar is.
Garnish with berries, mint and coconut strips. Consume immediately before the smoothie melts.
